Q: Can you recommend some foods and herbs to help build iron?
A: In TCM, foods which are red, black and green help to build iron.
Red Foods: Goji berries, beets, lentils, beef, liver, kidney beans
Black Foods: Black beans, raisins, blackstrap molasses, chocolate

Green Foods: Spinach, Chard, Collard, Kale, Sow Thistles, Wild Lettuces, Nettle, Yellow Dock leaves
Supplements: Floradix (liquid or tablet), New Chapter
Herbs: Nettle leaf, Red Clover flower, Dandelion root, Yellow Dock root. You can purchase these from Mountain Rose Herbs, a highly recommended company :)
NB. Dock root is bright yellow, which works on the spleen. As such, it is highly useful for people with malabsorption, such as Celiac disease or leaky gut. You can also buy Yellow Dock root powder and place in vegetable or gelatin capsules. As a tea, Yellow Dock has a bitter taste (best to add other herbs to cover the taste, e.g. Nettle ). When Yellow Dock root is added to soups/stews and then all is pureed (e.g. vegetable soup), the bitter taste disappears :)
Yellow Dock seeds can be ground and used as a gluten-free flour (most do not winnow the seeds first). Since Dock seeds have a taste similar to Teff flour, the two pair well together.
In a muffin or bread recipe, replace your usual GF flour with 1/4-1/2 cup Dock seed flour. In a cracker recipe, you can try using equal GF flour and Dock seed flour, such as this recipe HERE <--- (good herbal resource with Rosalee de la Foret).
