FF*= Version using oat flour for the crust
First, make the topping: place oats and water in pot. When it boils, remove from heat and let stand 8-10 minutes.
Meanwhile, make the dough with the flour and water, adding more water if needed. Use your hands to get the dough into a smooth ball; then press into a greased deep 9-inch glass pie plate to cover completely. Using a wet spoon helps to spread the dough.
Next, make the filling. Peel, core and chop (or dice) apples. Rub the pieces with the lemon or lime juice and place apples in the pie shell. Pour the oatmeal over the apples, spreading evenly. Sprinkle on xylitol or stevia over the oatmeal, if desired. Bake at 350F for 30 minutes.

Note that you can make oat flour by simple grinding rolled oats to a powder using a high speed blender.
If making the crust with oat flour and you find it too dry, add in the xanthan gum. Blend with the water in a food processor, then shape the dough into a ball and press into a pie plate. You can also use 1-2 TBsp oil instead (no need to use a food processor).
Stevia makes the apples in the filling taste sweet, and is also a great sweetener to use for the oatmeal topping. Other good sweeteners you can use include erythritol, xylitol and Lakanto.
