Blend ingredients in a food processor, using a bit of water/non-dairy milk for consistency. The more liquid you add, the thinner your pudding will be.
Very easy recipe using 3 ingredients: blueberries, ground coconut and a sweetener. If you like, you can add in a scoop of your fave protein powder (be sure to add in more water/non-dairy milk).
Feel free to use only Lakanto as a sweetener, adding in a touch of stevia if desired. You could also try using lucuma + stevia.
Serves 1 portion, easy to double/triple/quadruple and make more :)
Try replacing the blueberries with other berries or fruit (e.g. banana).
Makes a healthy snack, dessert or post-workout energy boost.
