Puree to smooth in a high speed blender or food processor. Warm up first if desired. Serve for Thanksgiving or Christmas dinner over your fave dish, such as in this Mock-Turkey Recipe.
Instead of the usual cranberry sauce, try this version using goji berries, apple sweetened dried cranberries and stevia to sweeten. If you'd prefer not to have seeds in your sauce, pass the sauce through a food mill first.

Pulse filling ingredients in a food processor until finely chopped (not pureed). Add buckwheat and sunflower seed flours with the red pepper juice in a bowl. Knead dough with the oil to make it smooth and elastic. On a silicone or non-stick surface, roll dough thinly to 1/2 inch to form a rectangle shape. Add stuffing all along one of the shorter edges of the rectangle, pressing down on the stuffing to hold in place. Carefully roll the dough into a log. Freeze to set. Cut the log into 6 medallions or pieces, allotting 2 pieces per person. Serve with drizzled Goji Berry Coulis and a side of Cauliflower "Rice" or Whipped Parsnip "Potatoes." Serves 3.
This is a mock turkey recipe using walnuts and herbs, a healthy alternative for those during the holidays.
To make red pepper juice, it's very simple: simple pass red bell peppers through a juicer and use the juice. It gives the dough a slight bit more taste, but you can use water or non-dairy milk and it'll be fine.
Note that you can use coconut or any other oil in this recipe.
Variation: Try using pecans instead of walnuts for the filling. Hemp seeds would also work in this recipe, however go easy on pulsing the ingredients in the food processor as you don't want to end up with a puree.
