Instead of the usual nut-butter-in-the-celery snack, try this!
Scoop your fave sugar-free chocolate or vanilla pudding into the celery sticks ---eat on up or refrigerate first, as you like. Or try this easy-peasy chocolate banana pudding in your celery next time around:
Choco Nana Pudding
• 2-3 bananas
• 1/3 cup carob powder
• Stevia to taste (optional)
Whip all ingredients in the blender.
Variation: Substitute 2 avocados for the bananas. This won't make it FF!
Cat says: Yummers! So simple to make! If you are going to use pudding, it obviously has to be thick enough to stay put---no runny pudding! You can also add garnishes, if you want (e.g. shredded coconut, black sesame seed, goji berries, etc.). Just be mindful that pudding doesn't have the same density like nut butter, so your toppings may not stay in!
