CF, DF, EF, GF, FF, MF, NaF, NutF, SoyF, SF, YF, VA, VEGA
• 2 cups jasmin rice, cooked in 4 cups water
• 4 1/2 cups red lentils, sprouted & blanched*
• 800ml (3 cups + 3 tbsp + 1 tsp) coconut milk
• 1 tbsp turmeric
• 1 tbsp onion powder (optional)
Add all to pot. Cook, covered, on med-high heat for 15-20 minutes, to allow flavors to blend. Stir occasionally to avoid sticking to pot.
Cat says: * To sprout lentils (WHOLE lentils, not split): soak overnight with more than enough water to cover. Drain. Let sit in colander and rinse 2x a day. Tails should sprout in 2-3 days. Put in pot with water to cover. Cook 5-10 minutes, then drain and use.
SOAK the jasmine rice overnight before using. You can also use leftover cooked rice as well!
As always, feel free to add other spices (ginger, cumin, etc.) as you like!
Oh, and using fresh (homemade) coconut milk instead of canned is another great substitution :)
