CF, DF, EF, GF, FF, MF, NaF, NutF, SoyF, SF, YF, VA, VEGA
• 1 cup green lentils
• 3 cups water
• 1 tomato, pureed in a high speed blender or food processor
• 2 tbsp coriander
• 2 tsp curry powder
• 2 tsp garam masala
• 1-2 tsp onion powder
• 1 tsp ginger
• 1 tsp crushed garlic
• 3/4 tsp turmeric powder
• Pinch or two cayenne pepper (for added heat, optional)
Add all ingredients to pot. Let come to boil; then simmer on low for 40-45 minutes. Serve over basmati rice.
Cat says: Classic lentil recipe. NO CANNED tomatoes here! Instead, just puree a fresh tomato and throw it in the pot. Lentils don't need to be soaked overnight, but you can still do so if you want. You could also sprout the lentils before cooking.
Good recipe to keep you warm on those cold, windy days!
