This recipe also works if you have leftover veggies or beans on hand. While ginger is used here, a curry flavor would work nicely as well.
Drain beans and cook 30-40 minutes with a 1-inch strip of kombu. Meanwhile, steam squash, carrots and beets until tender, about 30-40 minutes. Remove peel from squash. Mash squash, carrots and beets. Slightly mash beans. Add all to pot with water and ginger to taste (you can add in the seaweed as well, just puree and add to pot). Let warm and allow flavors to blend 5-10minutes.
