CF, DF, EF, FF, GF, GRF, MF, NUTF, SALF, SOYF, SUF, YF
Add all ingredients to a pot with about 2 inches of water. Let come to a boil, then simmer on low, covered, 15 minutes. Add ingredients to a high speed blender, adding in some of the cooking water for consistency. Whip until smooth. Serve warm or refrigerate before serving. Makes 4-6 servings.
This is a delish recipe that makes good use of any Rhubarb lying around. The Mangoes and Grapes provide the necessary sweetness that chases away any sourness from the Rhubarb.
Indeed, feel free to add a handful or two of greens (baby Spinach, Kale, Chard, Collard, etc.) to turn this into a Cooked Green Smoothie Recipe.
Yummy as a healthy sugar-free snack or dessert, you can also add in a scoop of your fave protein powder and use it as a post-workout energy boost.
Also suitable as baby food (strain using a food mill first).
