This is a nourishing meal for those cold winter days!
Blend kidneys with coconut milk, spices, lemon juice, and half the potatoes in a food processor to a thick paste. Stir in rest of potatoes. Spread mixture on tortillas; wrap and enjoy! Serves 4-6.
Variation: Add in other veggies for texture such as peas, diced cooked carrots, etc., or even leave some of the beans whole
Cat says: Great meal for leftovers! I always soak my beans to make digestion easier, something that isn't done with canned beans (so be prepared to toot if you go that canned route!). Kombu is a seaweed that helps to tenderize the beans. You could always choose another type of bean, like aduki (also called adzuki) or mung or a combo, for easier digestion as well. Feel free to use light or full fat coconut milk....This is quite the filling meal, so hope you've been out and about in the snow to work up an appetite!
