To Make The Blueberry Coulis:
--->Blend the berries with just enough water for consistency.
To Make the Parfait:
--->In a parfait glass, put chocolate mousse on the bottom and layer the coulis on top. Garnish with buckwheaties. Makes 1 serving.
This is a sumptuous recipe that is easy to make and sugar-free to boot.
Make sure you use just enough water to get a thick (not thin or watery) coulis, or sauce. Feel free to use other kinds of berries or even some cherries for the coulis. If you'd prefer a seedless sauce, consider passing it through a food mill first.
For a Grain-Free option, consider topping the parfait with a handful of goji berries, a few fresh berries or even some chocolate shavings.
