While you can use organic peanut butter (one ingredient: peanuts!), many are allergic to the aflatoxins that peanuts contain. No worries: there are other yummy-licious nut and seed butters that are available, like almond, hazelnut, sunflower & pumpkin. You can also make your own by using whole nuts & seeds. Consider skimping on the fat/nut butter & doing just a Jelly Banana Boat (just use jelly!) --- banana "jam-ming" lettuce, here I come!
• 2-4 large romaine lettuce leaves
• 1 banana
• 1 tbsp nut butter (almond, hazelnut, etc), or as desired
• 1 tbsp fruit sweetened jam, or as desired
Wash leaves and pat dry. Slice banana in half lengthwise and place each half on a leaf. Spread on nut butter and top with jam. Eat as is (open faced) or place another leaf on top to cover banana. Serves 1.
Variation: Cut the boats into bite-sized pieces. Serve as appetizer, using toothpicks to keep together (you would obviously have to triple or quadruple this recipe for your guests!).
Variation: Instead of lettuce, use collard leaves.
Variation: Vary the taste! Different nut butters offer different taste experiences! How about trying 2 different kinds of nut butters, one on each banana piece? Chocolate hazelnut spread, anyone?!
Note: E-Z P-Z to make your own nut butter: soak 1/2 cup nuts (or seeds) in water overnight, then drain and rinse well. In a food processor, blend the nuts (or seeds) 'til smooth, scraping down sides as needed. Yes, you can add oil (or a tiny bit of water or a nut milk) to make it smoother, if you want.
Variation: So many jams and jellies out there! Look for ones sweetened with grape or apple juice (fruit juice sweetened and sugar-free!). Try fig, apricot, black currant, black cherry, blackberry or a triple or quadruple berry delight!
Even better, make your own Jam Recipe: soak 1/2 cup dried figs OR dried dates OR dried apricots overnight (with just enough water to cover); then blend fruit with enough soak water 'til smooth in the food processor. Store any leftovers in fridge.
Variation: Hello celery! Replace lettuce with a couple of celery. Forget the jam. Spread nut butter (or chocolate hazelnut spread) on celery and top with raisins, goji berries, seeds, date pieces, shredded coconut, apple-juice-sweetened cranberries or dried blueberries.
