*Food Mill Recommended*
Place pears, spinach and water in a pot, covered. Let come to a boil on high heat, then simmer on low 15-20 minutes. Puree the mixture, including the cooking water, with the chestnuts in a food processor or blender. Serve warm or cold.
This is another Cooked Green Smoothie recipe that makes a great dessert or snack, and is even suitable as baby food.
You can use regular or baby spinach, as you prefer. Frozen will work fine if that's all you have.
If you have a food mill, you can simply slice the pears, cook the pudding, then use a food mill to remove the seeds.
Feel free to serve with your favorite toppings, such as pumpkin or sunflower seeds, goji berries, etc. A nice idea is to pulse chop additional chestnuts and then fold them into the pudding.
Keeps for about 3 days in the fridge and can be frozen for several months.
