OMG! These are absolutely fantastic! Better double or triple the recipe, because as soon as they are done, they are gone! Like Cat's other kale chip recipe, these are made with seeds (sunflower), NOT nuts. What makes these chips burst with vitality is the use of FRESH, live herbs. Fresh basil, oregano, marjoram & rosemary meld into an aria of love---you'll be singing your praises, too! Tired of store bought, pricey and fatty cashew kale chips? Try these!
• 3 bu. kale
• 100g sundried tomato, soaked with enough water to cover overnight
• 1 large red pepper, seeded
• Fresh herbs: basil, oregano, marjoram, rosemary, thyme
• 1/2 cup sunflower seeds, soaked overnight and drained (optional)
Cut or tear leaves away from stems (keep stems and juice them!), tearing into bite size pieces as you would for a salad. Whip the rest of the ingredients (including the sundried tomato soak water) in a high speed blender like the vitamix to make a thick vinaigrette. Place kale in a big bowl and pour vinaigrette over the leaves, using your hands to coat the leaves well. Place on mesh trays (3) in the dehydrator at 140F for 2 hours; then lower to 110F for another 4-6 hours or until dry.
Cat says: You can make these kale chips without (fat free) or with (low fat) the sunflower seeds--- either way, delish! You can also use 1 bell pepper instead of the sunflower seeds. Use 2-3 bunches of kale; if they are small, go for 3. You can use either the dark lacinato kale or the curly type --- no preference here!
Fresh herbs are what really make these kale chips have zing! How much? Just like is you were making a pasta sauce! A handful of basil, a few sprigs of rosemary, thyme and oregano, maybe some savory or even a touch of lemongrass. Whip in the blender and see how it tastes!
You can soak the sundried tomatoes overnight OR use hot water to speed up the process.
For a cheezy feel, add in 1/4-1/3 cup nutritional yeast (more if you like it really cheezy!) to the dressing; whip, massage onto kale, dehydrate and eat on up, fresh from the dehydrator!
