In a bowl, make a bed of greens. Take a handful of blueberries and place a pile for each direction: north at the top, west at the right, south at the bottom and east at the left side. Peel off outer layer of daikon radish; use a mandolin, cheese slicer or peeler to make 4 thick strips (you'll have plenty radish to use for another occasion!). Make 4 rings (circles) with each of the 4 pieces of the daikon strips and place in between the piles of blueberries. Add chopped strawberries to fill the daikon circles. Place the chopped parsley in the center of the salad; then drizzle on the lemon juice. Serves 1 hungry person or share nicely for 2!
Cat says: Daikon radish is nice and pungent against the sweetness of the berries! The lemon juice adds a touch of sourness...so refreshing on a hot summer's day! Enjoy!
