In a pot, add in water to cover the bottom plus 2 inches more. Add in strawberries and dates. Cover, let come to a boil, then simmer on low 45 minutes to 1 hour. Puree. Eat as a healthy snack or dessert or use as a topping in other desserts such as cookies and parfaits. If you'd like to remove seeds before consuming, pass the compote through a food mill before serving.

Add in a stalk or two of rhubarb if you like and a few more dates if you want it sweeter.
Feel free to use a bit of water to thin the pudding if you find it too thick. You can also add in 1-2 Tbsp ground chia seeds to add some protein and some omega-3s if you like.
Feel free to double or triple the recipe, especially if you have lots of berries lying around.
You can also try using raspberries, blueberries or a combination of berries instead of the strawberries (you'll need 6 cups of berries total).
