Add the rhubarb, strawberries and water in a pot. Let come to a boil, then simmer 15 minutes. Add rhubarb, strawberries and rest of ingredients to a blender and whip to a smooth consistency. Eat as is or refrigerate before serving.
If you'd like a thinner pudding, you can add some of the cooking water to the blender as well.
Vanilla or chocolate flavored protein powders help to cover the sour taste of the rhubarb. Only hemp or only pea protein powders don't work so well.
Feel free to add a whole scoop or protein powder if you like :)
Variation: add in a handful of chopped Kale, Collard OR Chard for some green nutrition. Omit using the greens powder.
