CF, DF, EF, GF, GRF, MF, SALF, SOYF, YF
This moist cake is grain-, chocolate- and sugar-free, using almond flour, untoasted carob and a mix of glyercin & stevia to sweeten. Gluten- and dairy- free as always, it also boasts the use of zucchini. Double the recipe if you want to make a full loaf.
Pulse the zucchini to small bits in the food processor using the pulse button. Blend in the flax eggs, glycerin/honey, coconut oil/almond milk/water and vanilla glycerin to the food processor, then blend in the almond flour, carob powder and several drops stevia. Taste test and add in more stevia until it reaches your desired level of sweetness. Pour into a coconut oil greased loaf pan (batter will only come up halfway, so it makes a "mini" loaf OR use a mini-loaf pan). Bake at 350F for 30-35 minutes. If you'd like to make a full loaf, double the recipe and bake at 350F 50-60 minutes.
This recipe makes a moist cake.
That means keep it as a sweet treat once in a while! ;p
Since the coconut oil simply adds extra richness to the cake, opting to use water or almond milk would help to reduce the amount of fat in the recipe.
Using almond flour (unblanched = brown bits from the skins that were left on, cheaper; blanched = brown skins removed from the almonds but more expensive) doesn't qualify this recipe as NUTF or FF. Although glycerin isn't metabolized by the body as it is a sugar alcohol (also called glycerol), it is also considered a fat.
If you don't want to use either glycerin or honey, you could try using the same amount of low glycemic coconut sugar OR sugar-free Lakanto, taste test, then add a bit more as needed. Make sure you add in 4-8 TBsp of water or non-dairy milk as well to make the dough stick together (this is to compensate for the fact that you've switched from a liquid sweetener to a solid one).
If you'd like, you can use a crushed vanilla bean or vanilla extract instead of the vanilla glycerin.
