Whip ingredients in a high speed blender like the Vitamix. Refrigerate to thicken before using OR place in the freezer for 1-2 hours. Use to decorate cookies, cakes and other sweet goodies. Once frosted, keep treats refrigerated before serving immediately.
This makes a simple sugar-free frosting recipe using walnuts. Feel free to try this with hazelnuts for a special treat!
You can soak the walnuts if you like for 4-8 hours to release the enzyme inhibitors. Drain and rinse before using.
Coconut butter has the same properties as coconut oil in that it solidifies at colder temperatures. You could use coconut oil in this recipe, although the coconut butter will have a thicker consistency.
Feel free to add more Lakanto if you feel it's not sweet enough for you. Other sweeteners that could also work are xylitol and erythritol, then pair with a few drops of stevia to get a sweet enough taste.
Best used as icing, not piped as frosting.
