Juice the watermelon rinds. Add the juice to the wine with the lemon juice. Serve chilled. Shake before serving. Keeps in the fridge for 1-2 days.
Don't know what to do with that watermelon rind? Juice it!
The juice doesn't affect the taste of the wine at all, so choose a wine that has a great taste. The added lemon juice acts as a stabilizer to keep the drink fresh and doesn't alter the taste of the wine.
Note that separation is normal, so shake before serving.
If you'd like to add some fruit juice for a bit of sweetness, go ahead. Grape, pineapple or mango would all work nice here.
Alternatively, you can juice the watermelon WITH the fruit attached.
A third alternative is to add just a bit of sweetener, like honey or maple syrup, or even a flavored stevia.
