Place Wood Sorrel in a 1-liter mason jar with the water. Put on lid and screw cap and let sit 4-8 hours (i.e., make an infusion). Strain out herb. Add in Stevia to sweeten, and, if desired, 1/4 cup lemon juice. Serve at room temperature or refrigerate before serving. Keep remainders refrigerated.
There are different varieties of Wood Sorrel, they all have a lemony taste. You could also try this with dried Sheep Sorrel (rumex acetosella) leaves/stems.
Counter-indication: as the name oxalis implies, Wood Sorrel leaves are high in oxalic acid, so not for those prone to kidney stones.
Variation: Use 1/2 Lemonade OR 1/2 Lemon Water (recipes below) + 1/2 Wood Sorrel infusion.
---> Add 1/4 cup freshly squeezed lemon juice (2 lemons) to 3 3/4 cups water. Add stevia if desired to sweeten. Can use lime juice instead.
---> Slice 1 organic lemon and place in a 1-liter mason jar. Add water to the top. Let sit 8 hours or overnight. Strain out liquid. Sweeten with stevia if desired. Can also use freshly sliced lime instead.
Refreshing and thirst-quenching, feel free to serve over ice on a hot summer's day.
