If you want to make an herbal vinegar, do this:
-> Chop fresh herbs* with clean scissors or pruners into small bits. Add in apple cider vinegar (the one with "mother" has beneficial probiotics while the other one doesn't), and stir with a non-metallic object to ensure all herb is coated with the vinegar. Pour more vinegar to the top of the jar, then place on lid and screw cap and let sit 6 weeks. If you like, you can use a plastic lid instead OR cover the metal lid with a piece of cling wrap or parchment paper. Strain out herb using a fine mesh plastic sieve (you can place an unbleached coffee filter in the sieve, if you like). Store in dark amber bottles. Label and pour straight over salads, or pair with oil and then add to salads. Indeed, you can this herby vinegar in any recipe that calls for vinegar.
*Choice of herbs to use are many! You can use just 1 or any combination of the following (and there are many others flowers & leaves you can use out there!):
N.B. Just remember that you want to pick the flowers and leaves on a dry (no rain day) and when it hasn't rained for 2 days. You want your herbs to be dry (otherwise your finished product can end up moldy--- no thanks!).
